Inside 1++, only No.9.
The Hanwoo served here is No.9 — the highest marbling score within Korea's own 1++ beef grade. Ribeye cap, tenderloin and chuck flap tail are ₩44,000 per 100 g; Woohwa ribeye and premium beef tongue ₩41,000; flat iron and short plate ₩38,000. Seven cuts, every one of them orderable by the 100 g, which is rarer than it sounds for a Korean BBQ in Hongdae.

It is charcoal, not gas. Searing the surface over a live charcoal fire lets the fat drip, catch and come back up as smoke that settles into the meat — which is why the sign outside reads “프리미엄 숯불 소고기”, premium charcoal-grilled beef. For most guests searching for a Korean Restaurant in Seoul, it is the first thing they check.
Each cut behaves differently. Saeusal, the ribeye cap, is a small muscle lifted off the loin and named for its shrimp-like shape; the premium beef tongue comes from the innermost part of the tongue, the part that moves least and so stays tenderest. Tenderloin is ordered from two portions up. If you would rather eat it raw, the gochujang beef tartare is ₩24,000, cut from chuck tender prepared the same day.
“Meet Saeusal, a special Hanwoo cut named after its shrimp-like shape. There is no actual shrimp involved! This prized part of the ribeye is known for its rich marbling, tender texture, and deep, savory flavor.”

Worth watching before the photographs.
Six clips the restaurant supplied: the charcoal arriving at the table, staff grilling the beef where you sit, the marbling of 1++ Hanwoo in close-up, and the walk down the Hongdae lane to the sign. Between them they show more of this Korean BBQ than a still frame can.
Supplied by the restaurant; subtitles and watermarks are as they came. Each clip starts muted.
